banana bread

This is my banana bread recipe that I created and have spent the past year perfecting. It's pretty much the simplest thing ever to make and it's always delicious.


2 or 3 over-ripe bananas, mashed*
2 cups flour.
1 cup of sugar
1 tsp baking powder
¾ teaspoon salt
1/2 tsp baking soda
½ cup vegetable oil
2 eggs
½ cup chocolate chips
Some coarsely chopped nuts (pecans or walnuts work well)


Grease up a 9x5 loaf pan with a little vegetable oil and set aside.
Preheat the oven to 350 degrees.
In a large bowl, mash the bananas. Then add each of the ingredients one at a time (except for the nuts), mixing to make sure everything is well combined.

Pour the batter evenly into the pan and top with the chopped nuts.

Stick it in the oven for 55 minutes to an hour, or until a toothpick inserted into the center comes out clean. Remove and let cool for ten minutes before removing from the pan and putting it on a cooling rack to cool completely.

Serve and enjoy!

* Idea: for pumpkin banana bread, leave out the chocolate chips, substitute two of the bananas for a can of pureed pumpkin, and add 1/2 teaspoon each of nutmeg, cinnamon, and ground cloves.
